There are times when I’m looking to have something light yet filling, salad comes to mind, but thinking about gathering all the healthy ingredients like flax seeds, quinoa, etc. and coming up with a salad dressing can seem a bit tedious for me. Keeping this in mind, I’ve decided to post simple salad recipes with everyday ingredients that are exciting, easy to whip up and of course flavorsome. There’s no room for boring food here! 🙂
This salad is refreshing and can be eaten cold or warm and don’t hesitate to switch ingredients as per your liking. Add chili flakes, dried herbs and garlic to the dressing for a different flavor.
So, here’s what you’ll need for Simple Salad #1:-
Tomato Salad with Roasted Peanuts and Sautéed Cottage Cheese
- For the Salad
- 2 large tomatoes evenly diced
- 1 small onion cut in juliennes
- 1 green chili finely chopped
- A few sprigs of finely chopped coriander
- ½ cup sautéed cottage cheese/paneer
- ¼ cup roasted peanuts
For the Dressing – Take 3 tsp of extra virgin olive oil (replace it with any flavored oil available), 1 tsp of freshly squeezed lemon juice, 1 tsp of honey, salt and pepper for seasoning. Mix well till it turns cloudy.
To Sauté Cottage Cheese – Dice fresh cottage cheese into bite size pieces. Add 1 tsp olive oil in a non-stick pan and sauté them on a medium-flame till you see a golden brown color on all sides. Toss well in salt and freshly ground black pepper.
To Roast Peanuts – Add peanuts in a dry pan and roast them on a low flame, giving it a shake after every 2 minutes. This is to avoid them from getting burnt. This process takes about 5-7 minutes.
Once you’re through with the above steps, toss everything into your bowl and pour the dressing over the salad making sure to coat it well.
That’s it. Within minutes you’ll have a nutritious, guilt-free meal before your eyes.
