Brinjal Fry in Thick Tomato Sauce

The subtle flavor that comes from the brinjal fry combined with a thick tangy tomato sauce just makes this dish so flavorsome and tasty. It does require quite a bit of preparation just like any other Indian curry, but it is just worth the time spent. Nevertheless, it is easy to make and tastes best with a mild dal (lentil) and jeera (cumin seeds) rice – A good combination! Hope you all give it a try and I am sure you all will definitely like it. 🙂

This is what you will need :

Ingredients (Servings: 3-4)

250 gm brinjal

4 medium sized tomatoes

2 small sized onions

3-4 garlic cloves

2 inch piece of ginger

2 green chilies

1 tsp lemon juice

Whole spices for Spice Mix (1 tsp cumin seeds, 1 green cardamom, 1 black cardamom, 3-4 whole black pepper, 1 small bark of cinnamon stick, 1-2 cloves)

1 tsp cumin seeds

½ tsp red chili powder

1 1/2 tsp turmeric powder

½ tsp chana masala (optional)

¼ tsp asafetida

4 tbsp olive oil

1 tsp salt

Method

  • Preparing Spice Mix– Dry Roast whole spices in a non-stick pan on a low flame until they release their flavor. Form a powder with the help of a mortar and pestle. Keep aside.

  • Drop in your green chilies, ginger, garlic and onions in the mixer grinder. Add 2 tbsp water and form a paste.
  • Add tomatoes in the mixer grinder and blitz to form a puree. Keep aside.

  • Marinating and Frying Brinjal- Cut brinjal into thin slices and drop them in water for a minute or two.
  • Combine 1 tsp turmeric powder, 1 tsp salt (adjust it to your liking) and spice mix (keep 1/2 tsp aside for the tomato sauce) and rub it evenly on the brinjal slices.
  • Heat 3 tbsp oil in a pan and place the slices evenly and fry on a low flame. Check and turn after 5 minutes. Cook and keep aside.

  • Preparing the gravy- Heat olive oil in a pan. Add cumin seeds and asafetida. Let it release its flavor.
  • Add ginger garlic green chili and onion paste. Sauté for two minutes.
  • Add tomato puree and let it cook.
  • Next, add leftover turmeric powder, chana masala, red chili powder, leftover spice mix and ½ cup water. Simmer and cook until oil comes on top. Add lemon juice.

  • Combine brinjal with tomato sauce and serve hot.

Cheesy Grilled Sandwich with Caramelized Onions

When I think of a juicy grilled sandwich, all it reminds me of is Ross’ moist maker sandwich in F.R.I.E.N.D.S. 😉 I am sure, Friends lovers would know which episode I’m talking about. A perfect grilled sandwich should be easy to gulp down and each bite should be bursting with flavor.

Over here, caramelized onions are the essence of this sandwich. They give a perfectly smoked and intense flavor. They blend in really well with the cheese and the veggies and the sandwich tastes just yum!

Ingredients

2 medium-sized onions cut in julienne

1 tbsp butter

Bread Slices

Cheese Slices

Filling of your choice (I used cottage cheese, onions and green chili)

Salt & Pepper for seasoning

Method

  • Caramelizing Onions- Add butter in a heated non-stick pan and add in your onions. Leave them on a medium-low flame for 15 minutes giving it a mix at regular intervals, making sure you don’t end up burning them. Sprinkle a little water if you feel they might burn. It will take more time for more onions. Some people also like to add a little sugar during the process.

  • Meanwhile, prepare the filling of your choice. I sautéed onions, green chili and cottage cheese cubes in a non-stick pan with a trickle of olive oil and seasoned it with freshly ground black pepper and salt.
  • Assemble your sandwich by adding cheese slices, filling and caramelized onions. Leave it open if you wish to or make a closed one like I did here. Place it on your heated griddle pan.

  • I had them with baked potato wedges and cucumber. Have this gooey grilled sandwich with a chilled shake. Just an icing on the cake! 😉

Tangy Chick-Peas Salad

One great thing about salads is that they can be modified to one’s own taste and liking. Some like to eat an all veggie salad whereas, some want fruits along with veggies. Some like with dressing, some without and several other ways, I could write a book on it ;). One can really get the real taste of fruits and vegetables when eaten in raw form. For me personally, I like salads that are crunchy, refreshing, light on the palate, and of course, TASTEFUL!  😉

This is another one of my very easy to do, healthy salad recipes. It makes a great appetizer, mid-meal snack or whatever you may want to call it.  I just followed my taste buds, tossed some ingredients together, and done!

This is what you will need:

Ingredients

1 cup boiled chick peas

1 diced cucumber

1 finely chopped tomato

1 medium size red onion

3-4 sliced black olives

For the dressing– 2-3 tsp chili oil, juice of 1 lemon, ½ tsp freshly ground black pepper and salt to taste. (Combine well)

Chaat Masala and spinach leaves for garnish

Method

Combine all your veggies—pour dressing over them and mix well.

Sprinkle finely chopped fresh spinach leaves for some Popeye power 😉 (I still love to watch cartoons sometimes)!! and some chaat masala to give the salad an extra kick!

Note: In case, you want to make chili oil at home, heat 1 cup unflavored oil in a pan and add around 3 tbsp finely chopped red chilies. Fry for about a minute on a medium flame. Basically, we want to make sure we have taken the moisture out of the chilies. Make sure not to burn them. Set aside to cool and store it in a dispenser.

If you are adding fresh red chilies, you can use them along with the oil. Otherwise, I am not so sure about the same for the chili flakes.

I will soon be doing a post on how to make chaat masala at home. It is very easy to make and much cheaper and fresher than the ones sold in markets.
