Easy Cheesy Avocado Toasts

It’s Christmas time, which means the best time of the year has arrived 😀 and Christmas would be incomplete without food and sweets. I really wanted to share a nice recipe with you all which would be easy to prepare and suitable for this holiday season as well. My friends and I wanted to make something with avocados. We could have easily gone with our good old Guacamole, instead we decided to make these easy cheesy toasts which I am really excited to share with all my readers over here. Hope you all give it a try and enjoy it as much as we did.

This recipe does not require any specific quantity of ingredients. We were able to use 1 big avocado for 6 slices. Feel free to make your own variations by adding mushroom, bell-pepper, broccoli, etc.

This is what you’ll need :-

Ingredients

Bread Slices

1 big piece avocado

Chopped garlic

Butter

Freshly Ground Black Pepper

Salt

Oregano for seasoning (optional)

Grated Processed Cheese (I used Britannia)

Method

  • Cut avocado into fine slices

  • Spread butter and sprinkle some chopped garlic. Butter will make the toasts nice and crispy.

  • Place your avocado slices neatly and sprinkle salt to taste

  • Top it up with grated cheese. Sprinkle freshly ground black pepper and oregano seasoning.

  • Place your slices on the middle rack of the oven and bake it for 7-10 minutes at 180 degrees Celsius.

  • Serve it with your favorite sauce. We had it with sriracha sauce. It goes really well with the toasts. Enjoy!

Broccoli and Cream on Toast

This recipe I have come up with is really simple. It requires very little cooking time and can be made in a jiffy. It is definitely nutritious, and we all know how healthy greens are for your body. Feel free to add your own veggies for your toppings like zucchini, mushrooms and bell-peppers. Red and yellow color would just make the topping more colorful and appealing. Green chili gives the topping a slight kick which is good. Do give it a try. It is delicious. 😉 Adjust the quantity of the ingredients according to your liking.

This is what you will need:-

Ingredients (Makes 3)
11/2 cup broccoli
1 medium-sized red onion (roughly chopped)
1 finely chopped green chili
A handful of green beans
A few sprigs of coriander
3 tbsp fresh cream
Grated Processed Cheese
1 tsp Olive Oil
Chili flakes, freshly cracked black pepper and salt for seasoning

Method

  • To make the topping, heat olive oil in a pan.
  • Add onions and green chili. Sprinkle a pinch of salt and sauté on low-medium flame until translucent.

  • Next, add green beans and broccoli. Sprinkle a handful of water and let it cook for 2-3 minutes. We want the keep the filling slightly crunchy. You can even blanch them beforehand and add them to the onions along with rest of the ingredients.

  • Add fresh cream, seasoning of your choice and grated cheese. Mix well and add coriander.

  • Place the topping on your toast. You can even use toasted garlic bread. Butter it and toast well.

Sweet Corn and Cheese Chili Fritters

These fritters are definitely for people who are fond of spicy food. The heat from the fresh green chilies hits you right on the palate combined with the sweetness coming from the corn kernels and onions along with the mellow flavor of mozzarella cheese. They all blend really well with each other resulting into an amazing recipe!

I had some leftover rice sitting in my refrigerator for quite a while, so I thought of using it to make some new recipe. My taste buds called out for something crispy and spicy. I just combined some ingredients ready on hand and came up with these fritters. It is really easy to prepare and very less preparation involved. Relish them with your favorite dips.

This is what you will need:

Ingredients (Makes 12 fritters  Preparation Time: 5-7 minutes  Cooking Time: 10 minutes)

1 cup boiled sweet corn kernels

1 cup grated mozzarella cheese

1 cup boiled rice

2 finely chopped fresh green chilies

2 small finely chopped red onions

2 tbsp fresh cream

2 tsp cornflour

1 tsp lemon juice

Seasoning (red chili flakes, freshly ground black pepper, salt to taste)

1-2 tbsp rice bran/ olive oil

Bread crumbs for coating (Blitz 2-3 bread slices in a mixer grinder)

Method

  • Take all of the above ingredients except oil and bread crumbs and combine well.

  • Divide into 12 portions, shape them up and coat them with bread crumbs.

Cheesecake

  • Heat oil in a non-stick pan and brown fritters on each side on a low flame. It will take about 5 minutes on each side.

Serve them with your favorite dip.

 They tasted really good in the form of wraps. Just spread your favorite fresh veggies, fritters and sour cream dip. Delicious! :p

Note: To prepare sour cream take fresh cream, add chili sauce, dash of lemon juice, black pepper powder and a pinch of salt. mix well.

Cheesy Potatoes and Spinach on Toast

This again is a very quick and easy recipe to prepare. Fried potatoes give it a much more different taste along with sauteed spinach and gooey mozzarella cheese and cream. All ingredients blend really well with each other and barely requires any cooking time. It is a perfect breakfast delight. Feel free to adjust the quantity of the ingredients as per your liking.

Ingredients (Makes 4)
4 slices of bread
1 cup spinach cut in thin strips
1 cup diced potatoes ( I have used frozen ones here)
1 finely chopped green chili
1 cup grated mozzarella cheese
¾ cup fresh cooking cream
1 tsp freshly ground black pepper
½ tsp red chili flakes
1 tsp olive oil and Oil for frying potatoes

Method

  • Thaw frozen potatoes and fry in hot oil. Keep aside.
  • Heat olive oil in a pan and sauté spinach for a minute or two.
  • Add fried potatoes, grated mozzarella cheese, cooking cream and give it a mix.

Black Chickpea (kala chana) Paranthas

A few years ago, I had these paranthas for the first time at my aunt’s house. They were really delicious and thought to myself; I had to make them for sure when I get back home. I did try them out and was liked by all. 🙂 Recently, this recipe came to my mind and decided to make them again. This time I improvised it a little. I added grated carrots to the filling. It only made the entire dish yummier.

Black Chick pea is darker and smaller in size than your regular white chickpea. They are full of protein and fiber. They are also an excellent source of iron. Adding carrots to the recipe makes it even more nutritious. We all know how nutritious carrots are.. Right? 😉  This dish is flavor packed, easy to make and filling as well. In case you are making it for little kids, you can add grated cheese too. It is not necessary to put the same quantity of ingredients to the filling. You can vary it according to your taste.

This is what you will need:

Ingredients (12 medium-size paranthas)

For the filling

2 cups soaked Kala Chana

¾ cup grated carrot (can be adjusted)

1 medium sized finely chopped red onion

2 cloves finely chopped garlic

A handful of chopped coriander

1 finely chopped green-chili

1 tsp dry mango powder

½ tsp red chili powder (can be avoided)

¼ tsp turmeric powder

½ tsp coriander powder

1 tsp cumin seeds

Salt to taste

Wheat flour dough and clarified butter for paranthas. 

Method

Wash and soak chickpea overnight. Next day, drain the water, rinse them in clean water and pressure cook them in approximately 3 cups of water and a little turmeric powder and salt. (2 whistles on a high flame)

  • In the meantime, do the chopping/grating.
  • Let the chickpea cool down a little (keep the soup aside), add rest of the ingredients under filling. Give it a rough mash, taste and see if you are happy with it.

  • Dust the base and roll out the dough.

  • Place 2 tsp filling in the middle and pack it from all sides. Put the rolled side down and flatten it with the help of a rolling pin. Shake off excess flour and place it on a heated pan on a medium flame.
  • Once cooked on one side. Flip it and brush it with a little clarified butter on both sides. Increase the flame and flip until you’re happy with the crispiness.

  • There you go. Yummy nutritious paranthas are ready to eat. Have it with curd, pickle and your favorite salad (Perfect combination). You can avoid the clarified butter if you are really health conscious. 😉

The filling tastes so delicious on its own. You can have it as a salad. For that after mixing chickpea, onion, green chili, carrots, coriander and garlic; season it with salt, dry mango powder, pinch of red chili powder and a dash of lemon juice. Healthy and quick.
